His dedication and style later took him to several countries around Asia, including Singapore, the Philippines and Indonesia.  As the executive Chinese chef at Shang Palace in Shangri-La Hotel, Jakarta, he believes in creating authentic Chinese delicacies by combining the freshest ingredients and cooking techniques to retain the flavours, scents and textures for your delight.

Hailing from Ipoh, Malaysia, Chef Christopher Chai is one of the lucky people who turn their hobby into a source of income. In the Shang Palace kitchen, he specialises in Cantonese and Hong Kong style Chinese food and is responsible for ensuring that diners can taste the authentic flavours of such cuisine.
